Tilapia en Papillote
It does not get any easier than this simple and tasty fish recipe which you can pull together in less than 30 minutes! I try and keep a bunch of frozen tilapia in the freezer, so that I can always cook this recipe when I run out of fresh groceries. I choose to buy my seafood at Whole Foods because they have a good sustainable fish program that ensures that all farmed Tilapia is raised with very strict standards. They don’t allow antibiotics or preservatives and prohibit the use of hormones. These methods of aquaculture ensure that there is less of an impact on our environment. This is very important to me because I choose to consume meat and fish so I want to ensure that when I buy them that I do so in the most sustainable and responsible way that I can.
Preparation Time: 30 Minutes / Serves: 1
Ingredients:
- 1 tilapia fillet
- 1 tbsp ghee
- garlic powder
- oregano
- lemon juice
- lemon zest
- 5 black olives
- salt & pepper
Instructions:
- Preheat oven to 375°F and cut a piece of parchment paper twice the size of the fish fillet and fold in ½ and place on a sheet pan
- Place the tilapia fillet toward the middle of the parchment paper
- Melt the ghee in the microwave and pour on top of the fish
- Sprinkle to your liking with the herbs, lemon juice and zest
- Thinly slice the olives and put them on top of the fish
- Fold the package from the left side to the right side rolling the parchment paper into a little envelope (see image below)
- Back in the oven for 15 to 20 minutes or until the fish flakes easily with a fork
