Berry Breakfast Bowl
This is my favourite on the go breakfast because it’s so easy to prep the night before in glass jars and then you just grab the jar from your fridge in the morning and you’re off to work. I usually go to the gym every morning so I don’t eat my first meal until around 9am. Once I get to work I simply add the granola to the jar, stir up and enjoy with a cup of green tea!
Preparation Time: 10 Minutes / Serves: 1
Ingredients:
1 cup almond yogurt (I use kite hill unsweetened almond yogurt)
½ cup frozen mixed berries
¼ cup grain-free granola (I use Kitchfix honey pecan grain-free granola)
1 tbsp almond butter or peanut butter (I use Wildfriends Classic Creamy Peanut Butter or Classic Creamy Almond Butter)
1 tsp cinnamon
Instructions:
Place ½ cup frozen mixed berries in a microwave safe dish and melt on high for 1-2 minutes.
Crush the berries with a fork to make a thick, chunky sauce.
Pour the berries on top of the almond yogurt, then top with the grain free granola, almond butter or peanut butter, and cinnamon
Optional – add a few fresh berries on top
Mix up and Enjoy!
Tip
You can make these up the night before so you can save even more time in the morning! I add the yogurt and frozen berries into a glass jar, and let it sit in the fridge overnight. By morning the berries have melted and created this amazing fruit compote. The nice syrupy texture of the melted fruit helps you avoid adding any additional sweeteners to the mixture.
