Lemon Ginger Tahini Dressing
I am a huge fan of the goal to have one big salad a day. This way you can be sure that you are hitting your daily veggie intake which helps increase the fiber in your diet. The one thing that can kill a salad is using processed store-bought dressings that are commonly made with all sorts of scary ingredients disguised as healthy. The best way to ensure your salad stays healthy is to make your own salad dressing. There is honestly nothing easier and cheaper than shaking a container of this dressing together every sunday to have on your salads at work all week. Once you start doing this you'll never be able to go back to those bottled salad dressings. GIve it a try and let me know what you think!
Preparation Time 15 minutes / Servings 5
Ingredients:
2 tbsp lemon juice (juice of 1 lemon)
1 tsp grated ginger
1 garlic clove (crushed)
3 tbsp tahini
1 tbsp olive oil
1 tbsp apple cider vinegar
2-3 tbsp water
salt and pepper
Instructions:
Juice lemons
Peel and grate ginger
Crush garlic
In a glass jar add lemon juice, garlic, ginger, tahini, olive oil, apple cider vinegar, and water
Shake, shake, shake
Add additional water to adjust the thickness
